Chocolate Fudge Cookies - Recipe

On Saturday, Miss C had her best friend over for a sleepover and as it was a miserable day, we decided to do some baking. The girls wanted to make cookies and Miss C had suggested we put fudge in them to make fudge cookies. I love anything to do with fudge so I was quite happy with that suggestion.

The girls were great and pretty much made them by themselves; I just weighed out the ingredients, put them in the oven to bake and then took them out of the oven when they were ready. As soon as they were cool enough to eat, we tried them and they were so scrummy!


200g Plain Flour
225g Light Muscavado Sugar
125g Unsalted Butter at room temperature
1 egg
1/2 tsp Baking Powder
1 tsp Bicarb of soda
Pinch of Salt
6 Cadburys Fudges, sliced in to chunks

This recipe makes 12 big cookies.

Let's Bake It

Line two baking trays with greaseproof paper and pre-heat the oven to 180°C. Place your sugar and butter in a bowl and cream together until well mixed. Beat your egg in a small bowl and then stir in to the butter and sugar mix. Add in your flour, salt, baking powder, bicarb of soda and fudge chunks. Stir until combined. The mixture should be slightly sticky but look as if it's forming a dough.

Take a palm size of the cookie dough and roll it in your hand to make a ball. Place this on your baking tray. Make sure you leave plenty of room between each cookie as they will melt down and bake flat once in the oven.

Place the trays in the oven for 10 - 12 minutes. Leave them to cool and then enjoy! You'll find that the outside of the cookie is a bit chewy whilst the middle will be soft and gooey.
