Me & Mine 2016 - May

I feel like I've blinked and the end of May has arrived. I can't believe we're about to start the sixth month of the year. Last year didn't seem to go as quickly, perhaps because we were counting down the days until our holiday to Florida. But with no holidays planned for this year, it feels like Christmas will be here before we know it.

May, for me, has been a busy month for college work. It's the final stretch and it has felt like it won't ever end. Thankfully I'm almost there and I can finally see the light at the end of the tunnel. A two year journey to better myself career-wise and make a huge difference for our little family. I'm also so glad that the work has been completed in our bathroom. There are still bits to finish off but the messy bits are done and I am so pleased with the results.

Husband has been working hard all month. He's been enjoying the lighter evenings to go on bike rides, even getting up early in the morning to go too. He's loving Game of Thrones and was excited to see the return of Top Gear. Sadly, he wasn't impressed with the new line up.

Zachary has been working his way through the Tom Gates' books. He can read a book in a night and is really enjoying going to the library and picking out new books to read. He is really excited for his birthday tomorrow and can't wait to have his friends over at the weekend.

Charlotte celebrated her birthday a few days ago and she had a brilliant time. It was a busy and rather exhausting weekend. We had family and friends over for the afternoon on Saturday, with her best friend staying for a sleepover. They went to sleep just before 11pm and were awake just after 6am! She got lots of lovely presents, mostly horse related. I can't believe our baby is 7!

This photo is so over-exposed but I found it so hilarious that we were taking a nice family photo whilst the cat decided to clean her bum. There's always that one family member!

June is going to be another busy month with Zachary's birthday, Father's Day and I finish up college too!

An Interview with my 7 Year Old

I started doing these "interviews" with the kids just last year but I do wish I had started them sooner. It's such a fun way to see if their likes change over the course of a year and I think they'll enjoy looking back at them when they are older. I'm always fascinated by home videos of my sisters, cousins and I when we were little...having said that, some of those are best left off the Internet!

Here's Charlotte's interview as a 7 year old. Watching her, she still doesn't seem like she is 7. I think Charlotte is quite a young 7, if that makes sense? I see some of her friends from school and I think, woah, you could be a lot older than 7. Charlotte is definitely innocent...at our age that would be called being naive. But I don't think you can be naive as a child. She loves playing with her toys and sleeping with hundreds of cuddly animals. The only sign of her being a bit grown up is her love for One Direction.

A Birthday Celebration

It was before 7am when Charlotte woke on her birthday. I knew she'd be up early, excited to see what presents she had to open. Whilst Zachary is quite laid back about birthdays and Christmas, Charlotte loves receiving presents, which is a bit like how I was as a child. I still love getting presents!

We decided that we weren't going to go over the top for her birthday this year. A big gift and a few small things would be enough and we asked family and friends to give her money if they wanted to get her anything as that way, she could put it towards something she really wanted. She had, in fact, already seen something she really wanted; a horse from Build-a-Bear.

After opening her presents and having breakfast, we got ready to head to the shops. We picked up some bits for the week, came home and had lunch, and then headed over to her best friend's house to pick her up for a sleepover. Her best friend just got the cutest little puppy on Friday night. He's a shih tzu, and so fluffy and adorable, I could have taken him home too. Charlotte really liked him and told me she was going to ask her Dad if she could have one.

He said no.

Family and friends began to arrive just after 2pm. We didn't have a big party with loads of people there, like we have done for previous birthdays; we kept it really low key and simple. I didn't even bother putting food on. We just had some teas and coffees and cake.

Her cake was beautiful. I asked the cake decorator to make something with horses and in the colours pink, purple and teal. She did an amazing job and Charlotte was blown away by it. It was really tasty too!

Charlotte wanted to have Chinese food for dinner so we ordered a takeaway. The kids played outside pretty much all afternoon because, apart from a grey start to the morning, it turned out to be a gorgeous sunny day. It was roasting.

At 7pm, the girls got into their PJs and cuddled up on Charlotte's bed to watch The Good Dinosaur. They had some popcorn and sweeties and snuggled with their special teddies. They were so cute to watch!

Of course, they didn't fall asleep until almost 10pm! I wasn't surprised because, despite it being a pretty ordinary day, it's a pretty extraordinary day when you turn a year older.

366 Project 2016 Days 143 - 149

Last Sunday, we were up early to head to the shops and to Frankie and Benny's for breakfast. We had to pick up bits for the kids' birthdays and we did some clothes shopping too. We enjoyed a snack at Starbucks which helped perk us up after a 6 hour shopping spree!

It was back to school and placement on Monday. As always the day went in really quickly. I stayed on a bit later so we didn't get home until almost 5.30pm. I was so tired but luckily I had some cake to perk me up!

On Tuesday, after another day at placement, we came home and got on with the homework. I filmed a review of some books we received from Carlton Kids Books. It was another early night for us all as I was shattered.

On Wednesday, it was my day off. Husband and I had an early morning meeting with the school to discuss Zachary's transition to high school. Zachary will be going to high school a year early because he has been moved up a year but we need to ensure that measures are in place to support him because it is a big step for him. After the meeting, I headed to the shops to pick up some more bits for the kids' birthdays and then came home to get on with some college work. Zachary was excited to wear his new Star Wars jammies.

It was back to college on Thursday but I didn't stay for long. The college was closing early anyway but I'm at that point where I'm almost signed off all of my classes which is a great feeling. I was home for 12pm and caught up on Hollyoaks! Charlotte lost another tooth at school so we made sure her tooth was under her pillow for the tooth fairy to take!

It was a miserable day on Friday and I spent it stuck at college. It was a rather unproductive day since I didn't have anything to do until my last class. I picked the kids up from school and we headed home to wait for Charlotte's birthday cake to be delivered. She went to bed as a 6 year old, ready to wake up as a 7 year old.

It was Charlotte's birthday on Saturday. She was very excited by all of her presents and by her beautiful cake. We had a really fun day with family and friends, and Charlotte had her best friend over for a sleepover. They eventually fell asleep just after 9pm!

You are Seven

Dear Charlotte,

As I say every year your turn a year older, I can't believe you are another year older. You are seven. You are still closer to 5 than you are to 10 but I know that you won't get any younger and soon I'll be writing you a 10 year old birthday letter.

I wonder what the age 7 will hold for you. I've always said 7 is my lucky number and, when Zachary turned 7, we had a pretty amazing year. I'm sure this next year will be pretty amazing for you, and us too.

You are such a character and a joy to be around. You are hilarious and can be quite witty without thinking about it. You are also very sweet and have a very caring nature. You love animals and you already know you want to be a vet with a huge farm filled with horses and dogs.

You live for the weekend, days off and holidays. You're not a fan of school...well at least the academic side of it. You love seeing your friends and playing with them at playtime but you aren't keen on homework. You are a clever cookie though and, if you would apply yourself, you could do really, really well. Then again, in a few years school will be full of exams and stress so you would be as well enjoying the time there just now.

You can be quite sensitive and can be easily upset over the smallest of things. I think you wear your heart on your sleeve. If you are happy about something, everyone knows about it. If you aren't happy about something, everyone knows about it too.

Your absolute favourite thing in the world is horse riding. You adore horses; real ones and toy ones alike. You aren't afraid to try new things whilst riding and you don't shy away from the hard work involved with keeping a horse. I know you'd love to have your own pony and, one day, I hope we can realise that dream for you...partly because Mum also wants a horse of her own.

I hope you have a wonderful birthday and a wonderful year of being seven.

Blogging and Anonymity

Something that I think every blogger considers when they draft their first ever post is should I blog anonymously, under a pseudonym or use my real name?

Using my real name was never something I thought twice about. I don't use my surname on any of my social media accounts but I don't have a problem using my first name on my blog or elsewhere. It's hardly an unusual name; Laura.

However I did consider how I wanted the kids to be known on my blog and, for many years, I've used nicknames for them. I don't know why, I just didn't use their names on my blog. I guess I thought that they didn't really have a choice about whether I blogged about them or not so to give them that privacy, I used nicknames. And it's worked great up until recently.

Now the kids are older and they know all about my blog, using nicknames for them just doesn't feel right. In fact, using the nicknames Z and Miss C sounds a bit forced and deliberate. It sounds unnatural, especially when we do videos with them. The amount of times I've had to edit out their names and then one of them saying, "remember to say Z or Miss C!"

I know a few bloggers have recently revealed their children's names and I hope you don't think I'm "jumping on the bandwagon", because this is something that I've been thinking about for a long time now. And after speaking to Husband about it, who shall still remain Husband or Dad on the blog, we agreed that it was OK to use their real names, whether writing about them or making videos.

Writing about my children is really to make memories for us all to look back on when they grow up. I want to share their achievements, their milestones and their journeys from baby to, well, whenever they don't want me to blog about them any longer.

Carlton Kids Book Reviews and Giveaway

Carlton Kids books are a new publishing company to us so I was excited to receive some of their titles to review. We were sent a good mix of fiction and non-fiction books, puzzle books and colouring books so the kids had plenty of choice on what to read or look at first.

My favourite book from the lot is the Alice Through the Looking Glass hardback book, written by Lewis Carroll. It is beautifully illustrated with lots of lift-the-flap fun which keeps children engaged in the story, especially younger children who might find the amount of text on the page a bit overwhelming.

We also really enjoyed the Tomb of Tutankhamun which can be used as a resource on its own or with an app that allows you to explore the tomb on a full 360 rotation. The facts are really interesting and easy to digest. It would make the perfect resource for a school project and I think we'll donate it to the kids' school as they have an Egypt topic every year.

The Mensa Kids Train your brain puzzle books are great for keeping your child's mind active during the school holidays or for extra homework. Z loves puzzle books and can work his way through one fairly quickly. These books come at different levels and increase in difficulty as you progress through the book. They are well laid-out and colourful, making them really engaging for children.

I love colouring books and so do the kids. I find colouring really relaxing and the more intricate, the better. I get really annoyed if I go over a line! These books are full of interesting designs and again, they vary in detail and design. There are sections where you have colour by number or dot-to-dot too.

Tilly Makes Really Good Cake

If you are a long time reader of this blog, or even if you haven't been, you will know how much I enjoy a good piece of cake. I have been known to consume more than a slice in one sitting but cake is like what chocolate and sweets are to some people; I just can't get sick of eating it. The type of cake doesn't matter either, although I'm not the biggest chocolate cake fan. So long as it has a delicious filling, a fluffy and light sponge and a generous serving of icing or buttercream on top, I'm sold.

A few days ago, a Glasgow based cake baker and decorator (is that the technical name for that job? Can I call them...Gods??!) asked me if I'd like to try some samples of her cakes. Eh, yes please and thank you kindly. Blogging has brought us many a great opportunities and, if you're going to give me cake to review, I'm not going to say no. I'm going to bite your hand off...and eat your cake.

Tilly Makes Cake is a cake business started by Natalie. Glasgow isn't exactly local to us however I have heard that people are travelling down from way up in the Scottish highlands to try her cake so you know something has to be really, really good if you're going to travel hundreds of miles to get it. Her cakes are so popular, Natalie is highly sought after for special occasions covering the whole of the UK!

Tilly Makes Cake specialises in wedding cakes and, having scrolled through her instagram account and Facebook page, the designs are simply stunning with meticulous attention to detail. Her roses are so realistic, I'm not convinced you can eat them but they are, in fact, 100% edible. However Natalie also makes children's cakes, christening cakes and dessert tables.

Back to the cake. I received my samples in the most beautiful box. Miss C eyed it up straight away and I told her there was no way she was getting the box to make a horse stable. This was to be a Mummy's box. Inside the box, wrapped in pink paper, were four beautifully wrapped cake samples. Rainbow napkins (Miss C did acquire those) and the dinkiest forks that you ever did see completed what would actually make such a gorgeous gift for someone. Of course, baking loads of cakes for one sample box isn't cost effective but, if you fancy your chances of getting a hold of one, Natalie is running a giveaway over on her Facebook page right now!

The four flavours I received were coconut and lime with a lime curd and coconut and lime buttercream, lemon sponge with lemon curd and lemon buttercream, vanilla sponge with raspberry jam and vanilla buttercream, and spice infused carrot cake with orange blossom buttercream. I was immediately drawn to the coconut and lime sponge. I love lime or lemon in my food but I've never heard of a coconut and lime combination in a cake so I was really keen to try it. It was really yummy. The sponge was light and fluffy with the coconut really coming through. The lime was sweet yet subtle. For me, I'd have loved a big smack of lime but I think it was perfectly balanced for the flavour combination. The kids also tried the coconut and lime with Z declaring it the best cake he'd ever tasted.

I wasn't too offended...I mean Natalie does this for a living.

The rest of the samples, which had been precut into three slices, I took into placement to share with the staff. Cake gets you through a busy day and we were certainly spoiled with freshly baked cakes instead of the usual shop bought ones. I had a piece of the vanilla sponge which was really lovely, especially with the raspberry jam instead of strawberry that you would usually get with a vanilla sponge.

The most popular of the four samples was definitely a close call between the carrot sponge and the lemon sponge. If you love carrot cake then you'd love the carrot sponge with the orange blossom icing. I could see this being really popular for Autumn/Winter weddings. As for the lemon cake...I think it was my favourite. The perfect amount of lemon in the sponge and icing, and I loved the layer of lemon curd too.

How to get a Better Night's Sleep

When you become a parent, something that probably rarely crossed your mind before the baby arrived can develop into a preoccupation – the sleep that you’re not getting and how to get more of it. It’s a classic conversation topic around the arrival of a new baby; with friends and family asking whether the baby’s allowing you to get any sleep, and then a couple of months down the line, whether the baby sleeps through the night. 

For many new parents, the lack of sleep is an unexpected downside of being parents, but you gradually learn to function on less sleep until you reach that magical moment when the baby starts sleeping through. Normally, though, you eventually get back to an even keel when you get some solid nights’ sleep back. 

But when you don’t sleep well, it can have all kinds of knock-on negative effects. You can feel more easily frazzled by the kids and become less patient. You can find it harder to concentrate on tasks during the day – whether that’s at home with the kids or at the office if you've gone back to work. Sleep deprivation or broken nights can have a cumulative negative effect on your general well-being.

What would you give to be able to sleep as well as the kids?
We all make sure our little ones have a calming and relaxing bedtime routine if we can. We should try and make sure we do the same for our older kids and ourselves. If you’re having sleep 
problems, try these ideas: 


We've all heard that too much screen time can affect our sleep, and according to one Norwegian study, teenagers who spent more than four hours a day looking at a screen were 49% more likely to take over an hour to fall asleep at night than those who didn’t. What goes for teens surely goes for us adults too. Be strict with yourself and set a cut-off time for any screen-based activity at least a couple of hours before you go to bed. 

Unwind and put stress aside 

Find ways to help you unwind in the evening so you don’t go to bed feeling tense. Have a bath or shower, or read a book. Dim the lights and play some soothing music. 

Perhaps your sleep is disturbed by dreams. Dreams can be fascinating and entertaining, but they can also cause anxiety. Sometimes they are a reflection of something that’s going on in our lives. For example, dreaming of snakes is common for people facing some kind of change in their life. If you’re having disturbing dreams, try jotting down anything you’re worried about before you go to sleep on a notepad. By acknowledging what’s bothering you, you may limit how it affects your dreams and sleep patterns.

Exercise – but not too late 

Including enough physical exercise into your daily routine can help people fall asleep more quickly and to sleep more deeply. But time it carefully; doing a workout class late in the evening (often the only time you have available when you've got kids) can actually have a detrimental effect on your sleep, as you’ll be too energised to fall asleep. Get plenty of exercise into the earlier parts of your day. 

Quit napping 

The idea of a daytime nap might seem like a fantasy to you, depending on what kind of kids you have! But if you have been curling up with kids for a siesta and then find your nights are disturbed, it may be worth cutting the daytime sleeps (for you, not the kids). And if you tend to nod off on the sofa after dinner; cut that out too. 

Health-check your sleep environment​ 

If you wake up in the night, be aware of what’s disturbed you. Was it an external influence – such as light coming in at the window or a noise outside? If so, you can do things to improve your sleeping environment, investing in black-out blinds for your bedroom as well as the kids’ or trying out earplugs to reduce the effect sounds might have on you. 

Broken nights are something that none of us want. Making a few simple adjustments to your daily routine could reward you with better quality and longer sleep.

Frankie & Benny's New Breakfast Menu

Usually when we go out for a meal, we'll go out for lunch or dinner. Breakfast just isn't a meal we would think about going out for, unless we're on an early morning flight and we grab a quick bite at the airport. So when the Glasgow Fort invited us to try the new Frankie & Benny's breakfast menu, we decided to give it a go.

We went on Sunday morning, for a 10:30am reservation. When we arrived, the restaurant was fairly busy but we were served very quickly.

The breakfast menu has a lot of choice, from lighter options to the full blown Papa Grande! There are plenty of vegetarian options and a good combination of sweet and savoury.

The kids' menu is pretty limited; sausage, egg, bacon and beans. It would be good to see some pancakes or waffles on there too. However it is only £3.95 and includes a choice of orange or apple juice.

The kids decided to order from the main menu and both chose the pancake and bacon stack with maple syrup. I chose the triple stack of pancakes, fried eggs and bacon and Husband, of course, went for the Papa Grande. We also ordered a side of hash browns and tea and coffee. The tea and coffee is unlimited refills for £1.95 which is fantastic!

The food came out really quickly and was cooked to perfection. The kids gobbled up their pancakes whilst I just about managed to finish 2 of my pancakes and eggs. Husband really enjoyed the Papa Grande which came with sausage, eggs, bacon, black pudding, a hash brown, potatoes, toast and beans. It also comes with mushrooms and tomatoes but Husband doesn't like either. F&Bs were only too happy to accommodate our requests. Husband asked for poached eggs which they did instead of fried eggs.

The total cost was around £31 which I thought was really reasonable for what we ordered and for the quality of the food. It was delicious and set us up for the rest of the day!

366 Project 2016 136 - 142

On Sunday, Miss C and I were up early for our horse riding lesson. It went really well and Miss C was the leader out on our hack! She did a brilliant job. After lunch, we headed over to my brother and sister-in-law's house to see them and our niece. It was a lovely visit and our niece was full of smiles for us all. When we got home, Miss C helped me make some pizza dough. She did a fantastic job of kneading the dough all by herself.

On Monday, it was back to placement and school for us all. The day went really quickly although, part way through I had to go through to the school because Miss C had hurt herself during play time. She tripped up and scraped her face and it looked really sore. She was fine after we cleaned her up. She also got an award; Pupil of the Week and it's her second one of the year! I had a bath after dinner as I was feeling a bit sore after horse riding.

On Tuesday, it was another busy day at placement where we made pizza. It was delicious! I was having a bit of an Italian theme food wise as we had spaghetti bolognaise for dinner. It's one of our favourite dishes!

On Wednesday, I was working and the day went in even quicker than normal. I picked the kids up from my friend's house but when we got home, I started to feel really unwell. I had a bath to see if that would help; it didn't. I went to bed early but couldn't fall asleep and I started to feel hungry after not eating any dinner. Husband got me a beef chow mein from the Chinese and that went a little way in helping me to feel better!

I woke up feeling awful on Thursday so I gave college a miss and worked hard from home. It was Z's share the learning day at school so I went along to hear all about their topic, Mary Queen of Scots. It was very interesting. It finished early and we could take the kids home early if we wanted so I collect Miss C and, along with Z of course, we headed home. I snuggled under a blanket and caught up on Hollyoaks!

I wasn't feeling much better on Friday but I made myself get out of bed and get to college. The day was quick but I felt myself getting worse as the day went on. I was glad to get home to a cup of tea. After sorting through my college folder and having dinner, I decided to go to bed for an early night. I had some fun on Snapchat with the new filters first though!

On Saturday, Miss C and I had a busy morning of errands. We headed to the shops to get our food for the week and to pick up a cake for my Father-in-law's birthday. After lunch, I got on with some more college work whilst Husband did the ironing. We headed out to Frankie & Benny's for tea to celebrate my FIL's birthday. It was a lot of fun!

Feeling Quite Unwell

When you feel unwell, it can be hard to remember what it feels like to feel normal. Or is that just me? As your nose blocks and then runs, and then blocks and runs some more, you long for the day to come when, finally, you are able to breathe without sounding like Darth Vader's understudy. It can be hard to remember what it feels like to not hurt when you cough or sneeze. Or for your joints not to ache.

I've been feeling quite unwell since Tuesday and, as the week has progressed, so has the strength of my illness. I feel hot one minute and cold the next. My head aches. My body aches. My nose is red raw from blowing and my throat is terribly scratchy.

I've tried going for a bath and going to bed early most nights. It hasn't helped. I've been taking as many cold and flu capsules as possible but they don't really help either. I long to feel well again!

Yesterday I started to feel nauseous. I kept thinking I was going to be sick and then I wasn't. I could easily have stayed in bed, snuggled under my duvet, dozing on and off but I couldn't. I had things to do, places to be and reports to write.

Sometimes being unwell and feeling completely run down is your body's way of telling you to slow down and just relax. I have to admit, the last few weeks I've been feeling pretty stressed with college work, presentations and exams. I can't wait for it to all be over in a few weeks!

Very Easy Pizza Recipe

Homemade pizza is something I've never attempted, however the children at nursery asked to make pizza so I searched for a recipe among my many cook books and found one that seemed fairly straightforward. Making it with 20 children was so much fun and it tasted so good, I thought my two would really enjoy making and eating their own pizza too.

Miss C was a great helper when it came to kneading the dough. She got the hang of it really quickly!

We decided to make cheese and tomato pizzas. They both thought they tasted really yummy! If you have ever though about making your own pizza, this is such a simple recipe to follow. But do give yourself plenty of time because you need to let the dough rest for an hour.


225g strong white bread flour
1/2 teaspoon of dried yeast
1/2 teaspoon of salt
150ml warm water
1 tablespoon of extra virgin olive oil
Tomato and garlic passata (shop bought or homemade if you have a recipe)
Cheddar and mozzarella cheese mix
Sprinkle of Italian herbs
Few twists of black pepper

Let's cook it

In a large mixing bowl, add your flour, yeast and salt. Stir them together and then make a well (a hole) in the middle of the bowl. Add in your water and oil to the well and then slowly bring the dry ingredients into it. Stir until it has formed a dough.

To start kneading. put some flour onto a clean surface and then, using your hands, knead the dough. With one hand, hold the dough in place and with the other hand pull the dough away from you until it can't stretch any further and fold it back on itself. Repeat this process for around 7-10 minutes.

After kneading the dough, place it in a lightly oiled mixing bowl and place a clean damp tea-towel over the bowl. Leave it in a warm place for around an hour or until the dough has doubled in size.

Preheat your oven to around 220°C. Line a baking tray with greaseproof paper. When you dough has rested, knead it again for 2-3 minutes and then roll it out until it is flat. You could make it circular or rectangular depending how you roll it. I used my hands as well to "shape" the dough.

Once the dough is nice and thin, place it on to the baking tray. Spread on the tomato and garlic passata and load on the cheese, herbs and black pepper. Pop it in the oven for around 10-15 minutes, until the cheese is nice and golden.

Leave the pizza to cool slightly before eating so you don't scald your mouth! It's hard to resist but worth it! You could add a variety of toppings to the pizza just be sure that if you add meat, it has been pre-cooked and to pop the cheese on last!
